Shooting on a very sunny day in sporadic shade can be extremely challenging. If anybody has any idea how to optimally shoot in such conditions, please let me know.

I like very much your video. Very dynamic and dramatic. I saw that you love your son, just the manner you take him.

The reason I didn't use a tripod was because I wanted to capture natural moments and since my son runs from one thing to another very quickly, I would not have had enough time to set up the tripod.
Let me know when you post some Canon HF100 videos. Would love to check them out!

When it comes to editing software, I know that Sony Vegas Pro 8.0b (Not 8.0a) works really well with the Canon's AVCHD format. With a dual core 2.4Ghz PC, the performance isn't bad at all.
I have read that Sony Vegas Movie Studio Platinum 8.0d (sony-688.vo.llnwd.net/dspcdn/releasenotes/moviestudio80d_readme.htm#WhatsNew) and Pinnacle Studio 11 also work.
As for DOF, there is an excellent tutorial about the different ways to manupulate it. It will give yo uan idea of how to play around with your camera's manual settings and where to place the camera relative to the subject and relative to the background to get the desired DOF. Heres the link:
