My friend Catherine and I made a little cooking show right after christmas. I learned a lot from this experience. Mostly, add the water AFTER you put the pan in the oven. And get a real roasting dish.

    I think you can also just put a separate pan with just water in it on the rack below. Then it would be a little easier taking it out too.

    The whole time, I was quietly saying "don't spill....don't spill......don't spill" and then jumped a little when it happened. Who knew that bread pudding and a pan full of water could evoke such an visceral reaction.

    Oh, man. Reminds me of an episode of "The Hogan Family" when the neighbor Ms. Poole has a cooking show, except one of the Hogan sons has to fill in, and he did a lot worse than you did. Glad it turned out in the end.
