
Dorayaki Factory

Along Sanjo-dori Cupola in Kyoto is a small shop selling Yuko Yatsuhashi and Dorayaki (Cinnamon Mochi Sandwich Mikasa). You can see the dorayaki being made in the window.
First the castella cakes are baked on a hot plate in 4 rows, 4 rows become 2 and one row is flipped. Anko is dispensed onto one of the cakes, a worker places the mochi on top and more anko is dispensed on the mochi. The other cake is lined up with the other row and then picked up and placed on top of the sandwich. Another worker uses a heat iron to brand the shop's kanji. The dorayaki go up through the ceiling to be sealed and packaged.
No fancy kit or software: recorded on PAL SD DV, coded using mencoder. Music "Engines of Creation" by Joe Satriani.
