    Sounds really good. I would suggest a different gin than Sapphire though. Bombay Sapphire (one of my favorite gins) has a large number of botanical infusions which I think would combat the sweetness and pomegranate. Something less complex, like Gilbey's or Tanqueray London Dry Gins, would be good, I think. Or, consider substituting the Tanqueray Sterling Vodka with citrus. That would probably be really good too.

    You also might want to try muddling the mint to release more of the flavor. Just toss it in a glass or shaker with the ice and mash it up a bit, then add the other ingredients...
