In celebration of a ten-day trip we're taking to Colombia with our friend Paul and his family in Bogotá, we prepared 4 authentic dishes with the help of Patricia McCausland-Gallo's book Secrets of Colombian Cooking.

While selecting recipes, we picked a few that require prep times of 3 hours or more, and when we asked Paul if this would take up too much of the night, he said, "You have to learn to eat like Colombians do ... late and long." Indeed, the meal took 6 hours from start to finish. A new Copy and Taste record.

We leave tomorrow to taste the real thing, and what a superb feeling to know we've earned it!

    I used a 6' monopod and held my camera up like a boom mic.

    Yummmm! Using bottles to squash the patacones.. very resourceful. It all looked delicious! But time and time again, I wonder how you keep your camera so clean...

    there is this INCREDIBLE place in Bogota called Andres Carne de Res, It's a restaurant and Disco. Tell the your hosts to take you there, you'll love it, I can guarantee it. They'll probably take you there even if you don't say anything, the place is NUTS. Good luck on your trip, Colombia is awesome !

    Check out the Church of Salt in Bogota. It's an amazing church built underground. Also, make sure to visit Monserrate, it has a beautiful view of the city. If you have time, try going to the little towns outside of Bogota, they're absolutely beautiful.

    It is Budvar -- because of a legal conflict with Budweiser, they´re forced to call it Czechvar here.

    patacones are great, in other parts of latin america they are called tostones. salted with some garlic mojo to dip them in, they are amazing.
