Skirt steak comes from the belly of the cow and is a very stringy and tough cut of beef. Cooking it hot and fast and sliced against the grain will make it tender and juicy. This cooking method makes for wonderful fajitas. This video show this method from start to finish so if you follow it you'll enjoy a great meal.

BQ 3 months agoYes it is but it's not a problem. Primo sent me a firebox replacement free except for the cost of shipping but I'm not going to put it in until I have to. It does not affect how the cooker works and has been cracked like that for two years. I dont care what anyone says, they will all crack eventually. The key is having the manufacturer that stands behind the warranty and Primo does. Glad you like the videos, I just picked up a Canon HG10 hi def camcorder so the videos will look a lot better soon.
