I heard about a recipe for pumpkin stew that is made in a pumpkin. I think that for the best results you may need to use a smaller baking pumpkin (also known as pie pumpkins?). You might also experiment with baking the shell before putting in the other ingredients. Usually the smaller pumpkins are more tender. Another idea I just had would be to use several small pumpkins and butternut squash to make a pureed soup and then use the big pumpkin as a serving dish. Hopefully if you attempt the soup again it will work better!
