Time Lapse How To
I'm using a Canon Powershot A510 which is an inexpensive still camera. The camera comes with shooting software that lets you connect the camera to a computer via USB and then control it.
One of the features of the software is Interval Shooting which lets the computer automatically snap a picture at a set interval. I usually set it for 12 seconds. Then you have a folder full of jpegs that you can join together in Quicktime or any other video editing software to make a video.
